Recipe & Video Granny's Thai Pork Larb

Ingredients

6 granny smith apples cored and hollowed out
500 gms pork mince
3 tbsp ground roasted rice
2 tbsp dried chilli flakes
1 bunch mint leaves
1 bunch coriander leaves
1 bunch basil leaves
3 tbsp sliced spring onion
2 tbsp sliced shallots
2 tbsp fish sauce
2 tbsp lime juice
1 tsp sugar

Method

Fry ground pork till just cooked, then allow to cool. Add all other ingredients and mix well. Stuff mixture in to apples and serve.

I'm glad you demonstrated the technique for eating these. It's definitely a clever recipe, but I didn't understand how to eat it (a, too, thought the apple was only a serving method for the larb). Now, I can see how the tartness of the apple would work with the other flavors.
