We had friends around for New Years Eve and as it was a cold night - we do get them, even in Spain - I wanted something hot to serve, that I could prepare ahead of time. I baked the potatoes in the halogen oven, then halved them and scooped out the flesh and mixed it with chopped red onion, fresh chives, grated cheese, black pepper, Worcestershire Sauce, a little butter and a raw egg. Then I piled the filling back into the potatoes, forked up the surface, and left them in the cold halogen oven until I was ready to serve them.

10 minutes on a high heat was enough to heat them through and crisp the tops, and because of the egg, the filling stayed put when you bit into the potato, they made great finger food. You could do them in an ordinary oven, of course, but they'd take longer. And of course, you could stuff them with all sorts of things. Any suggestions, people?
