I used these as part of a Greek mezze meal.
INGREDIENTS
1 pound baking potato, baked, peeled and riced
1 egg yolk
2 green onions, thinly sliced
1/3 cup finely chopped flat leaf parsley or cilantro or oregano or a mixture, even throw in a little dill
1/2 cup finely grated kefalotiri or myzithra or pecorino Romano cheese
1/8 tsp pepper
Flour for dredging
Oil for frying, olive as Greeks would use or vegetable
Green Goddess sauce as a condiment if desired
DIRECTIONS
Mix the potatoes, egg yolk, chopped herbs, cheese and pepper until blended. Taste and add salt if needed. Divide potato mixture into 6 equal pieces. Form each piece into a ball. Dredge the balls in flour and flatten. Fry in hot oil (medium to medium high on my stovetop) until golden brown on each side. Serve either hot or room temperature and with Green Goddess on the side if desired.
