“Thanks be to God we lived so long and did so much good.”
James Joyce, A Portrait of the Artist as a Young Man

Ingredients
175g Plain Flour
2 tbsp Sugar
1 tbsp Cocoa Powder
1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
1/2 tsp Salt
1 Egg
125ml Milk
125ml Guinness
1 tsp Vanilla Extract
2 tbsp Melted Butter
50g Dark Chocolate Chips
To Serve
Whipped Cream or Maple Syrup

Whisking Up Your Batter
Measure out the dry ingredients into a large mixing bowl (In goes the flour, sugar, cocoa powder, baking powder, bicarbonate of soda and salt).
Measure out your Guinness and milk into one measuring jug. Make a well in the centre of the dry mixture and crack in your egg. Gradually add the Guinness/milk mixture, whisking as you go. Finally add in the vanilla extract.

Cooking Your Pancakes
When you’re ready to cook your pancakes, heat some butter in a large frying pan and add 2 tbsp of the melted butter to your batter. Then add the chocolate chips and stir through.
Spoon 1-2 large tablespoons of your batter into your pan and smooth into circles. Cook your pancakes for a few minutes and then check whether the underside has browned. Usually we look for bubbles on the surface as a guide for flipping our pancakes over, but Guinness will give you extra bubbles so don’t rely on this.
Once your pancake is cooked on the underside, flip over and cook the other side.
