Have a friend that gave me a jar of gumbo file. Zatarains is the brand. I know you use it as a spice on a fish before serving. Also can be used as a thickening agent. How strong is this and how much do I want to add.

That is a good brand -- it is what I have in my pantry. File is one of those thing some people like, and others don't I don't use it when I make gumbo. My thickeners are the roux and okra. I put the file out on the table with the hot sauces for people to use if they want.
I love this herb - and its virtually unknown in the UK. I only found out about it through this forum and had to order on-line from a specialist supplier. I personally don't find it to be strong. For gumbo (serving 2) I use about a tablespoon stirred in towards the end.
