Had a new sole

This 'thread' might be more appropriate under "What's for dinner..."...

Had "grey" sole last night.

Have had lemon sole but never "grey"...very similar...very light...mild..

Drizzled a little lemon flavor olive oil...dice fresh herbs and drizzle of lemon juice.

400* for 7 minutes....very tasty.
 
Well, I've had lemon sole and on Monday night in Whitstable, I had Dover sole. Not a very good photo as it was in a restaurant but it was delicious. We get grey sole here - its a type of flounder and sometimes called Witch (not sure why). Here is a bit of info I found - do you think yours was imported?

Grey Sole is a right handed flatfish found in the Eastern Atlantic from Norway to Spain, where Witch is very popular as an excellent table fish. Slow growing and preferring the soft, muddy seabed's in fairly deep water, Witches can reach 60cm and up to 2kg in weight, although 250g -1kg are more common.
