This is a traditional portuguese dish usually made with codfish and called "pataniscas". I used hake fish since I didn't have codfish.
- 600g hake fish
- 3 small eggs
- 8 tablespoons flour
- Minced parsley or coriander, to taste
- Salt to taste
- Half cup carbonated water
- Half cup of the water where the fish was cooked
1. Boil the fish in water. Remove the fish, reserving the water.
2. Remove skins and fish bones and shred the fish.
3. Mix shredded fish, eggs, flour, parsley/coriander, salt, half cup carbonated water and half cup of the water where the fish was cooked. Mix well and fry, using a spoon to drop the batter into the oil.
Notes: - You can use 1 cup carbonated water or 1 cup of the water used to boil the fish. The carbonated water makes for a lighter, fluffier batter but the boiled water intensifies the fish flavor.
- You can add more flour or less water if you prefer a "heavier" batter.
