Recipe Ham And Mushroom Pasta

Ingredients
350 g (12oz) penne pasta
1 tbsp olive oil
2 sliced shallots
200 g (7oz) small button mushrooms
3 tbsp crème fraîche
125 g (4oz) roughly chopped smoked ham
2 tbsp freshly chopped flat-leafed parsley

Method
  • Cook 350g (12oz) penne pasta in a large pan of boiling, salted water, according to packet instructions. Meanwhile, heat 1 tbsp olive oil in a pan. Add 2 sliced shallots and fry gently for 3 min until starting to soften.
  • Add 200g (7oz) small button mushrooms and fry for 5-6 min. Drain the pasta, return to the pan and add the shallots and mushrooms.
  • Stir in 3 tbsp crème fraîche, 125g (4oz) roughly chopped smoked ham and 2 tbsp freshly chopped flat-leafed parsley. Toss everything together, season to taste and heat through to serve.

I have some leftover ham that will become tonight's dinner from this suggestion, only I will be using cream of mushroom soup and some sweet peas for my meal, just add a little cheese and pray the older boy will eat it.
 
This looks really good and something that would be a hit in my home. I will definitely be making this recipe the next time I have leftover ham to use up.
