A friend of mine raises Berkshire pork and usually has left over hocks..He have me a bag a couple of weeks ago so I cured and smoked some. I brined them for a few days, then a few hours on the smoker with apple wood chips. They will be great to add to recipes like, soups, beans, greens, etc..I like to gift these things to friends and family who like to cook...It's not every day somebody gives you a pig's foot for your birthday..

I'm looking forward to that myself..I haven't used any from this batch yet..since the pandemic, it's just been the two of us at home with rarely any visitors and GF isn't crazy about beans and peas so I don't want to make a huge pot of soup just for myself..I may at some point..
 
I LOVE ham hocks. It is my favorite part of the pig to have smoked. I especially love making that southern/black dish, collards and ham hocks, which are awesomely seasoned if done right.

If not smoked, they are great for making stock (and nibbling on anyways).

Once I am able to get a smoker up in the back yard, I'll try smoking some!
