Ideal as a snack or served with sourdough bread followed by fruit as part of a main meal.

Ingredients

2 tsp Olive Oil
4 1/8" slices Onions
2 large Mushrooms, finely sliced
5 Cherry Tomatoes, cut in half
100 grams Mashed Potatoes
1 large Egg
75 g fresh sugar snap peas
Salt and Pepper, to taste

Directions


Simmer sugar snap peas for 2-3 minutes and keep warm.

Lightly oil a large frying pan, add onion slices and mushrooms and saute gently. When onion slices are tender, add the tomatoes and cook for a further minute, and push to one side. Add mashed potatoes to pan. Then add egg and fry lightly. When egg is cooked and potatoes heated through, season, and serve with the sugar snap peas scattered on top.
