Herbes de provence is a new one on me, heard of it but never used?

Its simply a mix of herbs which grow in Provence, France. There is no specific formula. It can contain herbs such as: thyme, basil, rosemary, tarragon, savory, marjoram, oregano. Sometimes lavender is included.

I also used it yesterday in the picnic tray I posted: I cut up radishes and celery, then set out some butter, and some salt mixed with herbes de Provence - little smear of butter, little sprinkle of salt... 😋
 
I love to use it in soups and stews. It has great flavors, but a little bit goes a long way. I always add a little at a time, and taste, rather than add an amount stated in a recipe.

The one I have uses the following proportions:

4 tsp. dried oregano
2 tsp. dried basil
2 tsp. dried sweet marjoram
2 tsp. dried thyme
1 tsp. dried mint
1 tsp. dried rosemary
1 tsp. dried sage leaves
1 tsp. fennel seeds, crushed
1 tsp. dried lavender
