Honey Oats Granola Bars:

Ingredients:

1) Rolled Oats - see NOTE for amount.

NOTE: Use the baking pan to determine the amount of Oats to use. Cover the Pan with about 1/4" Rolled Oats.

2) Honey - as required
3) Oil (Olive Oil, Coconut Oil or Peanut Oil) - as required

NOTE: Mix Honey and Oil, 1 part Oil to 3 parts Honey. Use enough to saturate the dry Oats.

4) Salt (Optional) - 1 Tspn. or less

NOTE: Well known Granola Recipes recommend Salt, preferably, fine grained Sea Salt. It is claimed that without Salt, the flavor of Granola will be muted. If regular Table Salt is used, scale back on the amount used. If it is preferred not to use Salt, add a touch of Lime or Lemon Juice to give the Granola a flavor boost.

5) Vanilla - 1 Tspn.


Procedure:

1) Combine all ingredients in a mixing bowl and thoroughly mix.

NOTE: Include about 1 Tblspn. Oil.

2) Preheat Oven to 325F.
3) Slick a baking pan with Oil.
4) Evenly distribute the Granola Mix in the baking pan.
5) Press it down so it is level in a 1/4" thick layer.

6) Bake for about 25 to 35 minutes on the lower oven rack.

NOTE: Lightly Brown the Granola. Ensure that it does not toast or burn.

7) Remove the Granola from the oven and allow it to cool for about 2 hours so that it crisps up and the melted Honey thickens up.

8) Remove the Granola from the baking pan as one slab.

NOTE: After cooling the Granola will stick to the sides of the baking pan. Use a butter knife to wedge the sides free. Then tip the pan over on top of parchment paper and press on the bottom to free the bottom of the slab. You may have to wedge the sides again to get it totally free. Let it sit inverted on the parchment paper.

8) Cut up the Granola into similarly sized bars and store in air-tight packaging (zip-lock bags) and let set before consuming.

NOTE: The Granola Bars can be stored frozen.
