Honey Quinoa Salad (With Vegan Option)

Ingredients

1 Cup Quinoa
1/2 Pound Bacon/Pancetta Diced (Vegan Option: Mushrooms)
1 Red Onion, Diced
1/2 Cup Fresh Basil and Oregano, Chopped
1/2 Cup Chopped Pecans
1/2 Cup Cotija Cheese, Crumbled (Substitute: Feta)

1/3 Cup Honey
1/3 Cup EVOO
1/3 Cup Fresh Squeezed Lime Juice

Instructions

Cook quinoa according to instructions on package. Fluff with a fork. Let cool in the refrigerator and fluff again.

Cook diced bacon over medium heat until just starting to get crisp. You'll have to taste samples -- I know you'll just hate that. :wink: Drain the bacon on paper towels, and put aside to cool (don't eat it).

Mix honey, EVOO and lime juice with a blender or food processor (dressing).

Mix bacon, pecans, onions and herbs into quinoa. Then add the dressing. Stir to combine.

Sprinkle cotija (Feta) cheese on top of salad for serving.

I guess I can substitute quinoa for barley beads or bulgur...
