Hot Water Cornbread

Do you mean adding boiling water to the cornmeal beforehand?

I've tried doing it because I just can't make cornbread that doesn't crumble and fall apart when you look at it.

I thought it did? Never was a fan of polenta either 😅 Degermed coarse ground corn is a nutritional and culinary blank for me. Coming across masa harina and super finely ground pueblo corn via Mex/NewMex/Pueblo cooking was a culinary revelation, though. Amazing stuff. Has completely different characteristics.💖
