This is a Filipino Dish using a Chicken Meat.

The Ingredients:

1 pc whole dressed chicken (big)
1 glove of onion (crashed/pounded)
6 pcs of whole black pepper (pounded)
2 tbsp vinegar
1 tbsp calamansi extract
1/2 cup raisins
4pcs medium size garlic (peeled)
2 pcs laurel leaves
2 cups of chicken stock
1/4 cup white wine
1/4 cu sugar

Directions

1. Mix garlic, pepper, vinegar and calamansi extract.
2. Rub the mixture in the chicken and let it submerge to it.
3. Stuffed the chicken with raisins, laurel leaves and garlic and then put it in a bowl. Refrigirate overnight.
4. Put the chicken and the mixture in a casserole and cook in medium fire within 10 minutes.
5. Set to low fire and cook until the meat is tender.
6. Put the white wine and sugar. Let it boil for 30minutes. Serve hot.
