I know it's a basic question but I just want to know how to make good roasted parsnips. I usually just roast them with oil salt and pepper but they either burn slightly or end up undercooked. Looking for tips on how to make them better

Parboil them before roasting. That's what I do with parsnips, carrots and potatoes. They never get that leathery, dried out texture since I started doing that.

Parsnips this year are unbelievably sweet this year. I just chop ends off and roast with my other veges. For around 40 mins.

Do you slice or roast whole? How long do you par boil?

Don't really have a time, just enough to get them started cooking. I actually learned this trick on a trip to Italy, where we were served the best roasted veges I'd ever had. I asked them how they got them so soft and tender inside, but crispy outside. It's kind of a "duh" thing when you think about it.
