Recipe Iranian / Persian Kibudeh

Kubideh ( Kebabs)

Ingredients

1 lb lean ground beef
one med onion, minced (via food processor), juice squeezed out in cloth
1 TBS lemon juice and/or sumac spice
1 tsp salt
1 pkt beef Bovril
pinch MSG (optional)
½ tsp pepper
1 tsp turmeric
1 tsp cumin
½ tsp cinnamon or allspice
½ tsp thyme
Breadcrumbs (optional)
Butter

Method

  1. Mix all the above together, adding breadcrumbs if necessary.
  2. A whizz in the food processor helps the binding
  3. Shape into oblong sausages & skewers (optional)
  4. Oil , cover, & let sit for ½ hr to overnight in refrigerator
  5. Grill on BBQ & baste/serve with melted butter & saffron rice
** Also, grill whole tomatoes on the BBQ at the same time - as a side**

Salad-e Shiraz
Ingredients

1 cup peeled and finely diced English cucumber
1 cup finely diced tomato
1 cup finely diced sweet onion
3/4 cup finely chopped parsley
3/4 cup chopped fresh mint
2-3 TBS olive oil
3-4 TBS fresh lime juice
salt & pepper to taste
Toss above together & let chill – reduce amounts proportionately, as required.

Yogurt & shallots
2-4 Cups thick high fat yogurt
2-4 shallots, very finely chopped
salt
Mix all the above together and salt to taste, chill

Serve with Sangak (Persian bakery) bread or Turkish or other flatbread
Harissa (pref. glass jar) is a really nice condiment also

I will try making this! I'm not expert at kebabs so it could be interesting. One thing I noticed was 'cinnamon or allspice'. I think they are quite different spices. Maybe I will just use both!
