Kumpir is a simple and one of the most popular street foods in Turkey. It is the Turkish version of baked potatoes or jacket potatoes as known in the UK and Europe. It can be served with a variety of toppings and combinations, choose your favorite ingredients and create your own toppings.

Ingredients:
- 1 large potato (large as possible)
- 1 tsp salt
- 1 tbsp butter
- 2 tbsp mozzarella
Toppings:
Simple Russian salad
- 1/2 cup, canned corns, peas and paprika
- 2 tbsp mayonnaise
- 1 tbsp yogurt
Sausage in tomato sauce
- 100 g sausage
- 1 tbsp oil
- 2 tbsp canned tomatoes
- 1 tbsp ketchup
- 1 tsp dried oregano
- 1/4 cup water

Instructions:
  1. Bake the potato in the pre-heated oven (250°C / 480 °F) for 90 minutes.
  2. Cut it lengthwise and mix in the butter, salt and then the mozzarella (original version uses Turkish kasar cheese) .
  3. Mix until incorporated and cheese is melted.
  4. Serve with your favorite toppings (e.g. sausage in tomato sauce, Russian salad, coleslaw, pickles etc..)
