Lasagna from Scratch

Ingredients:

Ragu

  • 500 g ground beef
  • 150 g pancetta
  • 1 onion
  • 1 celery stalk
  • 1 carrot
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 150 g peeled tomato
  • 700 g tomato sauce (passata)
  • 500 ml red wine
  • 500 ml hot water
  • Salt to taste
    Bechamel:
  • 500 ml milk
  • 4 tbsp flour
  • 4 tbsp butter
  • 1 tsp black pepper
  • 1 tsp grated nutmeg
  • 100 g grated pecorino cheese (50 g extra for the assembly)
  • Salt to taste
    Pasta:
  • 250 g semolina flour
  • 250 g 00 soft wheat flour
  • 5 eggs

I also like sometimes to add some mini-meatballs and sub béchamel with mozzarella or scamorza (mine is close to the Neapolitan version)
There is also another version of lasagna called green lasagna, i.e. with the addiction of spinach in the dough, then seasoned with Ragu. This has been involved into a long debate for the authentic lasagna.

Tried to keep it simple as possible, but still took more than 2 days to finish together with filming it. Next time I can also try with mozzarella in the bechamel 😊
