Recipe Lemon Crinkle Cookies

My family loves anything lemon. Lemon Crinkle Cookies are an easy go-to recipe.

INGREDIENTS
1 1/2 cup All Purpose Flour (APF)
1/4 Tsp. baking powder
1/4 Tsp. salt
1/8 Tsp. baking soda
1 cup granulated white sugar
1/2 cup soft/room temperature butter
1 large room temperature egg
1 Tsp. Pure Vanilla Extract
1 Tsp. Pure Lemon Extract
Zest from 1 lemon. NOTE: I always double the zest - zest from 2 lemons
2 TBSP fresh squezzed lemon juice
3/4 cup +/- Confectioner Suger

METHOD
In a medium bowl sift together APF, baking powder, baking soda and salt. Set aside.

In a stand mixer with a paddle attatchment or a hand held mixer cream the butter and sugar. Beat in egg, vanillia and lemon extract, lemon zest and lemon juice. Scrape sides of bowl and beat again. Add flour mixture in 1/3 portions mixing until just combined.

Cover dough and refrigerate for 1 hour

While the dough is chillin you can clean up your kitchen and line a sheet pan with parchment paper. A cooling rack would be a good idea.

Heat oven to 350 degrees F

When dough is cold use a small scoop (1 1/2" ) to scoop the dough into small balls. Toss the dough balls in confectioner sugar. Place on the parchment lined pan. Use the heel of your hand to gently flatten each ball. Just enough to flatten the dome.

Bake for 15 minutes on a middle rack. Shift to an upper rack and bake for 5 to 8 minutes longer. Baking time will vary depending on your oven.
Cool in baking sheet for 5 minutes. Remove to a rack to cool completely.
