I was wondering if anyone can share a favorite, simple recipe for lentil soup. I would appreciate only stove top suggestions as I do not have a crock pot. Thanks.

Lentils do well with a bit of tomato and bacon, carrots and scallions, with spices that compliment those ingredients. I wouldn't add a tomato sauce, but just dice up some thick walled tomato like roma and toss it in with diced carrots and cross cut scallions. Lentils, like most beans will produce their own broth, but you can tweak that a bit with a veggie broth. A good stove top lentil soup can be that simple.
Of course, you can use something other than bacon - or something with it, for meat. Or go veggie with no meat at all.
