Delicious, and ideal if you've run out of pickle 
Ingredients:
100 ml cider vinegar
70 g granulated sugar
3 mint leaves
2 mini cucumbers, deseeded and sliced
Salt
Small handful of dill
Method:
1. Dissolve the sugar in the vinegar over a low heat.
2. Allow to cool with the mint leaves added; remove them when cooled.
3. Season the cucumber with a light sprinkle of salt.
4. Tip the cooled liquid over the cucumber.
5. Leave for at least 15 minutes.
6. When ready to serve, remove from the liquid and add some finely chopped dill.
Notes:
1. Keeps well in the fridge for a few days.
