LINGUINE PESTO WITH TOMATOES AND OLIVES
Serves 2

INGREDIENTS
8 oz dried linguine
2 TB olive oil
5-6 cherry tomatoes, halved
About a dozen pitted olives, halved
3 TB prepared pesto
1/4 cup grated Parmesan, divided
Salt and pepper to taste

DIRECTIONS
1. Prepare pasta according to package directions.

2. Meanwhile, heat the oil in a sauté pan over medium heat.

3. Add tomatoes and olives and cook gently for about five minutes.

4. Stir pesto into tomato-olive mixture and heat through, about two minutes.

5. Taste for seasoning and add salt and pepper as needed (easy on the salt, as the olives are already salty).

6. Add cooked pasta to pan with pesto-tomato-olive mixture and toss for a few seconds, then add half the cheese and continue to toss until pasta is coated in pesto.

7. Plate and top with remaining cheese. Serve immediately.
