Recipe Macadamia Nut Pancakes

As I have mentioned in another post, Wed. Aug. 21, Hawaii will be celebrating it's 60 Anniversary as a State. So far on the menu, for breakfast, we will be having......

Macadamia Nut Pancakes
makes 10 to 12

1 cup cake flour
1 tsp. sugar
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
1 cup buttermilk
2 TB. butter, melted and cooled slightly

butter
1 cup unsalted macadamia nuts, toasted and coarsely chopped

1. Sift flour, sugar, baking powder, baking soda and salt into medium bowl. Beat egg in another bowl until light.
2. Beat buttermilk into egg. Add to dry ingredients and stir only until just combined. Stir in 2 TB. melted butter. Let stand 2 hours
3. Heat griddle or heavy large skillet over medium-low heat. Grease with butter. Spoon batter onto griddle in batches (do not crowd), using 2 TB. for each pancake. Sprinkle each with about 1 1/2 tsp. nuts. Cook until tops are bubbly, about 1 minute. Turn pancakes and cook until second sides are light golden, about 45 seconds. Serve pancakes immediately.

Throw some white chocolate chips in there and really up the yumminess! I make cookies for Craig every once in a while that have macadamia nuts, white chocolate chips, rum and brown sugar in them. They are supposed to have coconut flakes also, but I skip them.

Hi, make that chocolate chips and it's a deal. lol I am not a fan of coconut either, maybe milk/cream. Bad childhood experience. Shame considering where we live, right?
 
Try the white chocolate chip and macadamia nut combo. There's just something about the 2 flavors together.

As SatNav would say..Grrrrrrrrr.... We both forgot the part of the recipe where it should stand for 2 hr. Looks like this won't be breakfast today, but lunch. lol We're just having some toast to hold us over

Finally had breakfast around noon. lol It was good, nothing really too special about it. DH put too many nuts in it and the pieces were too big, but other than that, like I said, it was good.
