1 cup caster sugar
1 lemon (zest and juice)
1 mango (flesh chopped)
1 cup plain flour
1 tsp baking powder
3 tbsp granulated sugar
1/3 cup honey
Cream together the caster sugar, butter, and zest of lemon.
Add eggs one at a time mixing vigorously.
Sift in flour and baking powder and mix.
Fold through chopped mango.
Spoon mixture in to a pre-greased (with butter) round spring form tin.
Place in an oven preheated to 170 degree celsius and bake approximately 1 hour.
Meanwhile, place honey, granulated sugar, and lemon juice in small saucepan and stir/simmer for 5 minutes.
Allow to cool a little.
When cake is cooked, use a skewer to pierce through the top of the cake several times.
Pour/spread sugar/honey/lemon syrup over the top of cake and allow to cool.
