Recipe Marinated Mahi Mahi

Picked up 3 pieces of Mahi Mahi on a discount and this is what I came up with.

Ingredients
  • Mahi Mahi filets
  • 3/4 cup EVOO
  • 1/4 cup water
  • Juice and zest of 1 lime
  • 3 cloves of garlic, smashed
  • 1 Tbsp of Tajín seasoning
Method
Combine all the ingredients and whisk thoroughly to combine. This will be short lived but that's okay. Put the fish into an appropriate container where the marinade will cover it. It's okay if it doesn’t cover all the way since you'll be turning the fish for the following 24 hours. Turn and stir as you think about it.

To cook pour all the liquid in a pan and simmer the fish until done.

Served on white rice with a dash of turmeric for color and a liberal sprinkling of ground red chili's.
