Recipe Marrow curry

    • oil
    • 1 tsp cumin seeds
    • 1 tsp brown mustard seeds
    • 1 large onion, thinly sliced
    • 3 tsp garlic (minced - I used from a jar)
    • 1 tbsp ginger (minced - I used from a jar)
    • 1 tin chopped tomatoes
    • 1 tsp chilli flakes
    • ½ tsp turmeric
    • ½ tsp chilli powder
    • 1 marrow (I used half a marrow and one large courgette). Peeled, deseeded and chopped into chunks.
    • 1 tsp garam masala

    1. Fry cumin and mustard seeds until the mustard seeds start to pop.
    2. Add the onions and fry until turning brown.
    3. Add the garlic.
    4. Add the tomatoes, ginger, chilli flakes, turmeric and chilli powder. Stir to mix.
    5. Add marrow. Stir, simmer then covered. Stir every few minutes and add water as required (I found I needed quite a bit).
    6. Marrow should be soft in 20-30 mins.
    7. Add garam masala.
 
How many ounces are your tins of tomatoes? Our small ones are usually 14.5 ounces and larger ones are 28 ounces.
