Methods and ingredients for curry

Curry is a meal we eat a lot. There are so many different variations of curry and different methods of cooking it that I thought it might be interesting to find out what other people do. My partner fries the meat first and then uses chopped tomatoes as a base for his curry before adding curry, chillies and garlic. He then adds peppers and sliced onions. I do it completely differently. I fry off the meat first. For the base for my curry sauce I use pureed onion and fry until golden before adding two cups of water, a tip I read in an Indian cookery book. Then I add the chillies, garlic, curry, ginger, turmeric and tomato puree. I never use exact measures I just throw things in until I think it tastes good and spicy. I return the meat to the pan and add onions and peppers, then simmer until the sauce is thick and the meat is falling apart. What different methods or ingredients do you use?
