Recipe Ms. Mofet's Pickled Eggs

Ms. Mofet's Pickled Eggs

Use 1 pt. Wide Mouth Mason Jar

4 hard-boiled eggs, peeled and cooled
1 med. clove garlic, smashed
1 sprig of fresh dill

1 C. white vinegar
1/2 cup water
1/2 tsp. coarse salt
1/2 sm. Onion, thinly sliced
1 TBSP. sugar
10 peppercorns

Place all ingredients EXCEPT eggs, garlic, and dill in a saucepan.
Bring to a boil, reduce heat, and simmer for 5 minutes.
Cool slightly.
Add garlic clove to the jar.
Place eggs in the pt. jar.
Top with the cooked onion slices and sprigs of dill.
Pour the liquid over the eggs and seal the jar.
Refrigerate at least 3-4 days before eating.

Use onions on salads or in sandwiches.

My dad would make salted eggs.
Just raw eggs, packed in salt.
After a couple of weeks, 1 or 2 would be boiled and used as a side dish for rice based meal.
Normally that would have been done with duck eggs, but I've never had it like that
Never heard of those. Have to try if the price of eggs goes down.
