4 rashers bacon diced
1/2 green capsicum (bell pepper) diced
1 cup thickened cream
2 tbsp finely chopped chives
1/3 cup grated parmesan cheese
salt and pepper to taste
Pre-cook diced bacon and allow to cool.
Whisk the eggs and cream together.
Then stir in the bacon, capsicum, and chives.
Pour the mixture in to greased muffin molds, leaving a centimetre or two to spare.
Sprinkle grated parmesan generously ove the top.
Bake in a preheated 180 degrees celsius oven for 35-40 minutes or until cooked.
