Recipe My Version of Menudo

Yes, we have all no doubt heard to the traditional Mexican Stew Menudo. I have been creating my own version of this soup for years now. I am not ashamed to admit though that this version requires opening cans. Yes, I buy Menudo in a can, but that isn't the only thing I put in this soup, here is what I use to make what I consider my own version of Menudo. This can vary at times as I get creative with it, but here are some of the basic ingredients I use.

1 32 ounce can of red Menudo.

1 16 ounce cans of Chili with beans

1 16 ounce can Tamales (this is also a good recipe for leftover homemade tamales)

1 cup instant rice

green onion

Open the Menudo and chili then pour into slow cooker. Open tamales or if frozen tamales microwave them. Chop up tamales and add to slow cooker. Mix these together and add a little water. Pour in instant rice and chop the green onion to the slow cooker as well.

As I stated before this is a recipe that I have been creative with, that others can be creative with.
