Naranja Agria Roast Chicken and Tomato:



Ingredients:

1) Chicken half breast - 1
2) Tomatoes, Roma - 2
3) Scallion - 1
4) Garlic, minced - 1 tspn.
5) Naranja Agria - 1/8 cup
6) Black peppercorns - 1 tblspn.
7) Sea salt - 1 tspn.
8) Farfalle (bowtie) pasta - 1/4 cup


Procedure:

-- Preparation --

1) Cross cut the raw half breast into sliced pieces.
2) Cross slice the tomatoes.
3) Cross slice the scallion, including the greens.
4) Partially crush the peppercorns.
5) Wet a baking pan with naranja agria.
6) Preheat the oven to 275F.

-- Cook and Serve --

7) Layout the chicken pieces and tomato mixed on the baking sheet.
8) Drizzle chicken and tomato with naranja agria.
9) Lightly sprinkle with, garlic, sea salt and peppercorn.
10) Slow roast at 275F on middle rack of oven for 2 hours.
11) Boil the pasta al dente just before completing roasting.
12) Cover a serving plate with pasta.
13) Cover the pasta with the roasted chicken and tomato.
14) Drop on scallion pieces.
15) Serve.
