Nutty Sweet Potato Biscuits
Makes 18-24 biscuits

NOTE: These are biscuits in the American sense of the word.

I microwaved the sweet potatoes - washed and scrubbed, pricked with a fork, wrapped in a damp paper towel, microwaved on high for six minutes, turned over, and microwaved for three minutes more, then cooled for about 20 minutes before peeling and mashing.

Ingredients
2-3/4 cups AP flour
4 tsp baking powder
1-1/4 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
3/4 cup chopped nuts
2 cups mashed sweet potatoes
3/4 cup sugar
1/2 cup butter, melted
1 tsp vanilla extract

Directions
Heat oven to 450F.

In a large bowl, combine flour, baking powder, salt, cinnamon, nutmeg and nuts. In another bowl, combine sweet potatoes, sugar, butter and vanilla; add to flour mixture and mix well.

Turn onto a lightly floured surface; knead slightly. Roll dough to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter and place on lightly greased baking sheets.

Bake for 12 minutes or until golden brown.
