Omni's Stuffed Chicken Breast with Apple Almond Stuffing

4 oz. Italian Sausage
1/2 cup diced onion
1/2 cup diced celery
1 cup chicken stock
1/8 tsp. sage or poultry seasoning
1/8 tsp. thyme
1/8 tsp. basil
pinch of garlic salt
1/2 cup diced green apples
lemon juice
1/8 cup almonds
2 cups bread crumbs
6 (8 oz.) boneless chicken breasts
melted butter
salt, pepper, paprika to taste

1. Chop sausage and in a skillet saute until browned. Drain off all but 1 TB drippings; add onion and celery and saute until limp. Add stock, sage, thyme, basil and garlic salt; bring to boil and continue boiling for 5 minutes.
2. While stock is boiling, dice apples into 1/4" cubes; place in water with lemon juice to keep fruit from discoloring.
3. Saute almonds until light brown. Add crumbs to skillet; mix well. Drain apples and add to skillet. Add almonds and toss ingredients to coat. Remove from heat and let cool.
4. Lay chicken breast skin side down on wax paper covered counter or work board. Place equal portions of stuffing in center of each breast and fold chicken into an oval. Tuck in ends. Brush with butter and season with salt, pepper and paprika.
5. Place in lightly buttered baking dish, fold side down and roast in preheated 350 F oven for 30 minutes or until tender. (For this dish, it is best not to skin the chicken. The oil in the skin will baste the breast and keep it moist.) Makes 6 servings
