Orange Cake

yields 12 servings

Ingredients:

Cake:
1 (15.25 ounce) package Yellow cake mix
1 (3 ounce) package instant Vanilla pudding mix
¾ C. Orange juice (fresh is always better)
½ C. Vegetable oil
4 large Eggs
1 tsp. Lemon extract

Glaze:
2/3 C. Granulated Sugar
1/3 C. Orange juice
1/4 C. unsalted Butter

Method:

Preheat the oven to 325 degrees F (165 degrees C)

Grease a 10-inch Bundt pan

Make the cake:

Stir cake mix and pudding mix together in a large bowl

Add in the remaining cake ingredients

Beat on low speed with an electric mixer until blended (follow the instructions on the cake mix box)

Scrape the sides of the bowl, then beat on medium speed for 4 minutes

Pour batter into the prepared pan

Bake in the preheated oven for 50 to 60 minutes

Transfer to a wire rack (do not remove the cake from the pan yet)


Make the glaze:

Cook all of the glaze ingredients in a saucepan over medium heat for 2 minutes

Pour over the still warm cake

Allow the cake to cool completely, the glaze will soak into the cake

Invert your cake to a lovely cake plate
