I love parsnips - roast, boiled or mashed in with potatoes. They're pretty abundant just now - even here in Spain - so I was looking for some recipes to ring the changes. I came across this feature on the BBC Good Food site.
I like the look of the parsnip pilaff, and the curried parsnip mash, and there are a couple of good soup recipes there as well. Anything that takes your fancy, or do you have a favourite way with parsnips to share?
