Parsnips are such a lovely vegetable: sweet and nutty with a slight spice taste and hints of anise. They make a marvellous soup with very few additions. How do you use them?

Strangely, they have something in common with bananas when cooked.
 
They can be very sweet. I don't like them when they are roasted with honey drizzled over. It topples them too far that way.
Never had a sweet parsnip per se. They taste like very peppery carrots to me. When I roast, I parsteam a bit, otherwise they dry out too much for us, then toss with salt and pepper, plus a little EVOO, and roast.

Carrots are sweet though? There is a South American relative of the parsnip. I can't remember the name. Don't know if you or karadekoolaid have eaten that...

I'm not the one that dislikes sweetish savories. Not sure why you seem stuck on that. One of the reasons I like carrots more is their sweetness all on their own.
