I hadn't heard of it - looked it up but can't yet find a proper recipe.

Far as I can tell its a white ragu sauce often with veal - here is a link which comes up on a search for Morronese although the word Morronese isn't mentioned on the page.
But - I have no idea really if this is really what you are looking for!
Is that like Roman Morroni?
Not sure about that recipe, but that tagliatelle withe straw and hay with chanterelle and speck looks good.
