PASTA CARBONARA
Makes 4-6 servings

Ingredients
6 slices pancetta, chopped bite-sized
2 TB olive oil
4 cloves garlic, crushed
1 tsp fresh rosemary, minced
1 18oz package penne, gemelli, casarecce
3 egg yolks
1/2 cup Parmesan, grated
1/2 cup pecorino, grated
2 TB fresh parsley, chopped
1/2 tsp red chili pepper flakes
Ground black pepper to taste

Directions
In a large skillet over low heat, cook pancetta in olive oil with crushed garlic cloves and rosemary, until the pancetta is crisp, about 12 minutes.

In a large pot of boiling salted water, cook pasta according to package directions. When draining, reserve 1/4 cup of the cooking water. Add the cooked pasta to the pancetta mixture in skillet and toss.

In a medium bowl, whisk together egg yolks, Parmesan, pecorino, parsley, chili flakes, and some pepper. Whisk in reserved cooking water.

Add egg and cheese mixture to the skillet with pasta and toss until creamy. Serve immediately.
