Pie/Cornish Pasty filling for someone with very limited ingredients

My girlfriend in currently on an elimination diet which cuts what she can eat right down to the bone. As you can imagine trying to get as much veriety as possible is important. I am trying to think up more recipes that she can have, but I'm a cooking newbie. What I'd like to make her next is a pie/cornish pasty. I've got the pastry covered but I'm not sure what to put in it. Can anyone recommend a filling using only the ingredients listed below? Cheers!

I'd be very happy indeed with a pasty of potato, cheddar cheese, and ham. You could try doing a breakfast-type one with scrambled egg, bacon, and maybe a bit of the rocket, and lamb with the potato would be good, as would broccoli, cauliflower, and cheese.
 
I´m surprised there´s no onion in there. A traditional Cornish Pasty has beef, potato, swede, onion, salt & pepper. However, given the ingredients you´ve listed, I´d use potatoes, broccoli and cheddar cheese. PLUS salt & pepper.
