And IMHO, the Spanish are absolute geniuses with pig's trotters ( or pigs hands, as they sometimes call them)
I'm posting a couple of classic Spanish recipes in a moment... or two. Enjoy!
Barriehie if you wanted to introduce trotters to someone who doesn’t like the idea of them what would your least trottery recipe be?

I really love that. Reckon the mods should adopt it as a warning -

Here we go then. I'm doing this as a public service, because no-one in my house eats trotters, or has a clue how to make them. :hyper: :laugh:
However, my late father-in-law loved them, and used to go to a local Spanish Tasca to eat them:
Manitas de cochino a la Madrileña (Trotters, Madrid style)
Tomorrow I'll try to find some other regional variations ( Galicia, Andalusia, Cataluña, Basque) and copy them here. I may even find some South American variations.

It could work.
Maybe better with cider or white wine but red will work.
Slow cook, very slow (but Barriehie will be using a pressure cooker)
I’ve tried slow cooking them, I just ended up with a gelatinous mess and no discernible meat so I guessed I cooked it for too long 🤷‍♀️
 
Here comes another classic Spanish recipe, this one from Basque country:
Manitas de cerdo a la Vizcaina (Trotters, Basque style)
The secret to cooking trotters, according to this recipe, is low and slow.
Basque cuisine is really, really good - there are a couple of excellent restaurants in Caracas and the way they cook seafood and fish is extraordinary.
