What do you like adding to your potato salad?

Personally, I like my potato salad to have a lot of onions. I also like adding bacon and chicken strips. :) I will make this salad tomorrow, so I would really appreciate the suggestions.
 
Mayonnaise, sour cream, chives sauteed in bacon fat, and the bacon that was fried to make the oil in which to sautee the chives. (Recipe courtesy Neil Gaiman from one of his darker short stories.)

Mushrooms, too, if I feel like having it a little heavy. And quail eggs.
 
I would add a little mustard to the mayo, plus some chopped onion and/or chives. I like to eat it with scotch egg, which is a boiled egg (shell removed) wrapped in sausagemeat and breadcrumbs, and deep fried. It's a great British delicacy. Or you could just use pieces of cooked sausage and slices of hard boiled egg.
 
The usual;

I start with cubed boiled potatoes.

Chopped onions, green pepper, sweet relish, celery, pimentos, mayo, sliced hard-boiled eggs & seasonings. :eek:

Mine is very, very basic:

Potatoes
Mayo
Mustard
Sweet pickles (with some of the juice)
Onions
Salt

That's it. No eggs or peppers or meats or crazy seasonings. We just keep it very simple. :)
 
I do not make potato salad for my house because no one eats it but me on occasion. I have helped my mother in law make hers and she uses the basic ingredients: potatoes, eggs, mayo, mustard and chopped pickles. She adds a bit of salt and pepper also.
 
When I want potato salad for myself, I just use about 3 potatoes.

That way, there's not too much of it!! :) :eek:
 
Also like a lot of onions in my potato salad as well as some diced up boiled eggs. Sometimes I also like incorporating some mustard into it or even better, honey mustard, but most of the time I prefer to just keep it simple and stick to the basics.

Oh wow, this sounds good. Bacon bits and chives. Oh my god!! Can't wait to try this one out. I'll serve this at the next barbecue.
 
I don't like mayo so I use hummus. My favorite store has a roasted red pepper hummus that's I use as a mayo substitute for many dishes. Other ingredients: mustard, diced celery and carrots and diced sweet pickles. I also add garlic powder and smoked paprika.
