Recipe Potatoes with Celery, Black Olives and Tarragon

As simple as can be to make this unusual side dish. Its perfect with fish. If you have any left over, its delicious pan fried with an egg (see pictured below).

Ingredients (serves 2 as a side)
200g new potatoes. peeled and halved or quartered, depending on size
10 black olives
2 sticks of celery (the green part)
2 - 4 peeled whole cloves of garlic
Bay leaf
Fresh tarragon
Salt
Olive oil (optional)

Method
  1. Place the potatoes, celery, olives and whole cloves of garlic in a saucepan. Cover with cold water and add the bay leaf and 3 or 4 sprigs of tarragon. Add salt judiciously, depending on how salty the olives are.
  2. Bring to the boil, then simmer for 20 mins or until the vegetables are tender.
  3. Drain and serve. You can toss the drained vegetables in a little olive oil if desired.
