Prawn and Crabmeat Ceviche:

Ceviche is a South American Seafood Salad dish which originated in Peru. It may be served as an entre' or a side. It may be served cold, sauteed or with its meat components, raw.


Ingredients:

1) Prawns
2) Crabmeat
3) Anaheim Peppers
4) Scallions
5) Roma Tomato
6) Garlic
7) Olive Oil
8) Lemon Juice
9) Cilantro

Procedure:

1) If necessary, pre-cook Prawns and Crabmeat
2) Split Prawns in half and cross cut into slices or pieces.
3) Shread crabmeat
4) Set Prawn and Crabmeat aside till ready to serve.
5) Dice up Annaheim Peppers, Scallions, Tomato and Garlic.
6) Chop Cilantro
7) When ready to serve, form a bed using Diced Ingreadients.
8) Layer Prawn and Crabmeat on Top
9) Add Cilantro
10) Mix Olive Oil and Lemon Juice and lightly drizzle on top.
