Yields: One 9" pan
Ingredients
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 6 tablespoons white sugar
- 1/3 cup shortening
- 2 tablespoons butter, melted
- 1/2 cup milk
- 1/2 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla extract
Instructions
- Grease, flour the pan on a preheated oven (425 degrees).
- Mix the flour, sugar, salt and baking powder in a large bowl. Using a pastry blender, cut in the shortening to the size of small peas.
- Use another bowl to beat the egg. Stir in milk and vanilla. Add this egg-milk mixture to the flour mixture, stirring until rightly blended.
- Place the batter on the pan, spreading evenly. Drizzle melted butter on top.
- In another bowl, mix the brown sugar and cinammon with 2 tablespoons of flour. Sprinkle this on top of the cake. Bake for 15-20 minutes.
