Recipe Rib Eye Fillet with a Garlic Mustard Wine Cream Sauce

Recipe for two Rib Fillets

2 Fillets
4 rashers streaky bacon
Salt
Pepper
1 tbsp. oil
2 tbsp. butter
1 sprig rosemary
1 clove garlic (slightly bruised)

Mustard Sauce

1 tbsp. dijon mustard
1 tbsp. seeded mustard
2 cloves grated garlic
1/2 cup white wine
1/2 cup cream

Method

Wrap beef length ways with bacon rashers and secure with toothpicks. Season beef with salt and pepper. Heat oil in pan and place beef fillets in medium/hot oil. Add butter and rosemary/garlic to pan. Baste beef with rosemary/garlic butter whilst searing. Sear for 4-5 minutes each side.

Once seared, put bacon wrapped beef in a preheated oven (180 degrees) for approximately 5 minutes (for medium rare). Rest for 10 minutes.

Meanwhile, add 2 cloves of grated garlic to pan. Deglaze with 1/2 cup of white wine, Add the mustards and stir for 2-3 minutes. Turn heat down then add cream and keep stirring till sauce is desired consistency.

Serve bacon wrapped steak with mustard sauce, greens of choice, and potatoes.
