A simple rice pudding with delicious creamy mascarpone and a crispy caramel top.

Ingredients (per individual serving)
25g pudding rice (use any risotto rice)
150ml milk
1 heaped tsp mascarpone
1 tsp honey (or to taste)
Sugar

Method
  1. Simmer the rice and milk together until the rice is tender and the milk almost all absorbed.
  2. Mix in the mascarpone and honey.
  3. Place the mix into ramekins and top with a layer of sugar.
  4. Use a kitchen blow torch to caramelise the top.
  5. Allow to cool.
