Recipe Roasted potatoes with bacon, mushrooms and corn

:chef: Ingredients
  • 10 Baby Yukon Gold potatoes (quartered)
  • 2 strips of streaky bacon (thick cut)
  • 1 pint whole white mushrooms
  • 1/2 cup parsley (chopped)
  • 1/2 cup Italian dressing
  • 1/2 can of corn
  • 1 tbsp EVOO
  • 2 tsp of lemon juice
:chef: Method
  1. Preheat oven to 400 F (200 C)
  2. Place sheet of aluminum foil on baking tray.
  3. Put Italian dressing, EVOO and Lemon juice on tray
  4. Arrange potato quarters and bacon on tray
  5. Cook in oven for 15 minutes
  6. Remove from oven and turn potatoes
  7. Add mushrooms bottom side up. Drizzle a little dressing inside mushrooms.
  8. Spread corn throughout tray.
  9. Top tray with parsley. Return to oven for 20 minutes.
  10. Serve hot from oven. (after you take pictures :happy:)

I like that combo.

Wish I had a real cool answer, but it is short for Extra Virgin Olive Oil.
Ooops...missed @CraigC comment. So I will change my answer to Eggless Vegetarian Organic Okra. :giggle:
