Shrimp and Crab Seafood Salad Sandwich:

Simple and easy to make with no need to cook or microwave, Shrimp and Crab Seafood Sandwiches are a welcome alternative to Tuna Salad Sandwiches. The only unique thing about this recipe is the use of Horse Radish. This recipe can be a good use of leftovers from a bigger Seafood meal.


Ingredients:

1) Shrimp - 1/2 Cup
2) Crabmeat - 1/2 Cup
3) Celery - 1 Stalk
4) Scallions - 2
5) Mayonaise - 2 to 3 Tblspn
6) Horse Radish - 1 Tblspn
7) Bread Rolls or Sliced Bread (Makes up to 4 Sandwiches)

Procedure:

1) Chop up Shrimp.
2) Shread up Crabmeat.
3) Dice Celery and Scallions
4) Mix all ingredients in a bowl with Mayonaise and Horse Radish.
5) Slice open Sour Dough Rolls and Fill with Seafood Salad.
6) Serve
 
You use raw shrimp/Scallions?

I think the shrimp must be cooked shrimp. Same with the crabmeat.

I love crab and shrimp (prawns in the UK). Unfortunately I can't do mayo (I have a mild intolerance) and in any case prefer something lighter. I'd sub the mayo with kefir. As for the horseradish, bring it on!
