So what is it? Or more accurately what is it used for and on?

Well it's an emulsifier and finds its way into a while host of foods but mostly into breads and cakes. Other foods include baked goods, pancakes, waffles, cereals, pastas, instant rice, desserts, icings, fillings, puddings, toppings, sugar confectionaries, powdered beverage mixes, creamers, cream liqueurs, dehydrated potatoes, snack dips, sauces, gravies, chewing gum.... You get the idea...

It's main use is to extend the shelf life of bread by keeping it soft.

But here in lies the problem, it can come from 3 sources: 1 is from dairy, 1 is from animal and the other is from a plant source. So how do you tell? Well the most obvious answer is that you can't! Some manufacturers do now state that their product is not suitable for dairy or milk allergy sufferers which will give you a clue, others simply don't state it is suitable for vegetarians when there is nothing 'obvious', but sadly not many yet so this!

So what can you do, other than avoid it completely? If you are allergic to dairy like myself, your only real option is to stay away from it until you have contacted the manufacturer to ask what the source is! Great isn't it!
